Chicken Brine
This easy chicken brine will help to tenderise and juicy the meat.
Ingredients
- 4 gallon Water
- 5 lbs Ice
- 2½ cup Brown sugar
- 4½ cup Salt
- 2 cups star anise
- 4 cup All spice

PREPARATION Instructins
- Take 1 gallon of water and bring to a boil. Place star anise, all spice, and cinnamon in Bouquet Garni.
- Add sugar, salt, and Bouquet Garni. Simmer for 15 minutes.
- Place ice in 5 gallon container pour hot brine on ice to cool. Add remaining cool water.
CHICKEN BRINE COOKING Instructions
- Wash, Rinse, and Sanitize prep station .
- Wash hands
- Collect all necessary pans, pots, utensils, and equipment
- Dissolve salt, sugar, in 1 gallon water
- Add Bouquet Garni of spices
- Simmer for 20 minutes
- Cool in 1 gallon ice
- Add 3 gallons water .
- Cover with lid.
- Label with name and date.
- Check and log temperature.
- Store in walk-in cooler.
