Ingredients
- 20 Chicken halves
- 1 gallon Chicken brine

PREPARATION Instructions
- Place chicken halves in 3 gallon Cambro with chicken brine. Refrigerate.
CHICKEN QUARTERS COOKING Instructions
- Wash, Rinse, and Sanitize prep station .
- Wash hands.
- Put on gloves (RTE Food).
- Collect all necessary pans, pots, utensils, and equipment.
- Combine in 5 gal. Cambro .
- Cover with lid.
- Label with name and date.
- Check and log temperature.
- Store in walk-in cooler .
