- 2 lbs Green onions
- 1 lbs. Scotch bonnet peppers
- 6 oz. Ground thyme
- 1 lbs Dark brown sugar
- ¾ cup Minced garlic
- ¾ cup Ground thyme
- 3 tbsp Cinnamon
- 6 tbsp Nutmeg
- Salt and pepper
- 1 qt Soy sauce

- Combine all ingredients in food processor and blend till liquefied .
JERK COOKING Instructions
- Wash, Rinse, and Sanitize prep station .
- Wash hands.
- Put on gloves (RTE Food).
- Collect all necessary pans, pots, utensils, and equipment.
- Combine all ingredients in food processor mix until liquified.
- Cover with lid.
- Label with name and date.
- Check and log temperature.
- Store in walk-in cooler.
