Hot Sauce
A hot sauce recipe that tastes exactly like Frank's! It takes 15 minutes to prepare and may be made mild, medium, or spicy depending on your preference.
Ingredients
- 4 cups Water
- 10 lbs. Red Serrano chilies
- 4 Onions chopped
- 12 Garlic cloves
- 1 tbsp Salt
- 8 cups Distilled white vinegar

PREPARATION Instructions
- Bring water, onions, chilies, onion, garlic, and salt to a boil. Simmer for 20 minutes.
- Let Cool. Puree in Blender. Season with salt to taste. Refrigerate 3 Weeks.
HOT SAUCE COOKING Instructions
- Wash, Rinse, and Sanitize prep station .
- Wash hands
- Collect all necessary pans, pots, utensils, and equipment.
- Simmer/steam peppers, onions, garlic, and salt for 20 minutes.
- Puree in blender with vinegar.
- Season with salt.
- Cool down with shallow pan method or ice bath .
- Cover with lid.
- Label with name and date.
- Store in walk-in cooler for 3 weeks .
