- ½ Maradol Papaya
- ½ Pineapple
- 1 cup Lime Juice
- 1 cup Brown Sugar
- ½ cup Molasses
- 1 tbsp Chili Powder
- 1 tbsp Cheyenne

- Puree Papaya and Pineapple. Mix all ingredients until combined simmer for 20 minutes. Then cool.

- Wash, Rinse, and Sanitize prep station .
- Wash hands
- Put on gloves (RTE Food)
- Collect all necessary pans, pots, utensils, and equipment.
- Mix ingredient and simmer for 20 minutes .
- Cool using shallow pan method.
- Cover with lid.
- Label with name and date
- Check and log temperature.
- Store in walk-in cooler .
