Yellow Rice

Yellow rice is a great side dish for almost any dinner. This dish can be prepared on the stovetop or in a rice cooker. So delectable!
Servings 25 4 qt.

Ingredients
  

  • 3 lbs Jasmine rice 
  • 1 qt. Water
  • 1 qt. Chicken stock
  • 2 cup Onions, diced and sauteed 
  • 3 tbsp Oil 
  • 3 tbsp Salt 
  • 2 tbsp Curry powder

PREPARATION Instructions

  • Measure 3 lbs. rice in full hotel pan. 
  • Tilt pan in prep sink under faucet and fill with water. Fill with water almost to the top of pan edge.
  • Wash by folding rice over with your hand gently. You do not want to break the rice.
  • Drain water from rice by tilting the pan and using your hand to stop rice from falling out.  
  • Add 1 qt. water, 1 qt. chicken stock, onions, salt, curry powder, and oil.  
  • Cover with plastic wrap and foil and back at 350° with fan on for 35 minutes.  

YELLOW RICE COOKING Instructions

  • Wash, Rinse, and Sanitize prep station.
  • Wash hands.
  • Put on gloves (RTE Food).
  • Collect all necessary pans, pots, utensils, and equipment. 
  • Melt butter.
  • Add to water, turmeric, and salt.
  • Rinse jasmine rice .
  • Combine all in metal hotel pan.
  • Cover with plastic wrap and foil tightly .
  • Bake in oven for 25 minutes at 325 F.
  • Divide into 1/3 pans.
  • Cover with lid.
  • Label with name and date .
  • Check and log temperature . 
  • Store in hot storage
