- 2 oz Butter, cut into pieces
- 6 oz Guittard 66% Cocoa Wafers
- 10 oz Crisco
- 2 ½ cup Brown sugar
- 1 ¼ tbsp Vanilla extract
- 5 large eggs
- 4 tbsp Cocoa Powder
- 9.4 oz AP flour
- 3 tbsp Corn Starch
- ¾ tbsp Baking powder
- 1 ¼ tbsp Salt
- 1 cup Semi Sweet Chocolate Chips

PREPARATION Instructions
- Preheat the oven to 325°F. In the top of a double boiler or in a heatproof bowl over barely simmering water, melt the 8oz 66% Chocolate Wafers chopped with butter, and Crisco stirring occasionally until smooth.
- Mix sugar in warm Chocolate and butter dissolving sugar. Mix in vanilla, and cocoa powder.
- Add the eggs one at a time mixing before adding each egg.
- In a bowl, mix together flour, corn starch, baking powder, and salt. Slowly fold the flour mixture into the chocolate mixture with spatula, mixing well until blended.
- Stir in the chocolate chips and pour the batter into the prepared pan. Bake for 35 minutes, until a tester comes out clean. Remove from the oven and cool over night.
COCOA BROWNIES COOKING Instructions
- Wash, Rinse, and Sanitize prep station
- Wash hands
- Collect all necessary pans, pots, utensils, and equipment
- Pre-heat oven 325 F
- Line baking pan with parchment. Spray with cooking spray
- In double boiler on low to medium melt 66% cocoa wafers. Careful not to scorch chocolate. About 8-10 minutes.
- Mix dry ingredients. Flour, baking powder, and salt .Melt butter in sauce pan
- Dissolve sugar in butter
- In mixing bowl combine butter and sugar with melted chocolate, cocoa powder and vanilla
- Make sure mixture is not too hot before adding eggs. Eggs could cook.
- Add eggs one by one mixing after each egg
- Fold in flour mixture
- Fold in chocolate chips
- Fold in 1 tablespoon butter. 3-4 folds only
- Pour batter into parchment lined pan .Evenly distribute
- Bake for 40 minutes.Remove when toothpick test show just a little moistness at tip .
- Let brownies cool completely .
- Put on gloves .Cut into 16 pieces
- Place single serving in paper bag .Fold bag
- Label with name and date .
- Store in front counter display .
