I love Latin culture and foods. I’ve been cooking for many years now. Life led me to Arizona where I got the kitchen nickname Rojo. That was probably because of my bright red hair.
About Rojo’s Latin Recipes
Rojo’s Latin Recipes is a culmination of my favorite latine foods, recipes from my old Latin restaurant Papaya Chicken and Grill, and more.
I first fell in love with Latine foods when I was living in Phoenix, Arizona. The combinations of spices, meats, corn, and chiles made an instant connection with me. There I also experience the Latin culture firsthand on an everyday base. It was the start of now an ever-going food relationship.
After finishing school in Arizona I moved back home to Raleigh, NC. I spent many years working in marketing and spending most of my time on a computer. My wife and I saw an opportunity to build our own restaurant and that when we started Papaya Chicken & Grill.
Papaya Chicken & Grill was a new, independent Latin concept restaurant. Our specialty was Chicken, Rice, and Beans. Recipes included wood-grilled chicken, frijoles negros, arroz de amarello, mojo pork, empanadas, salsas, sauces, and more. The concept never really took off and we had to sell the restaurant and get out.
After closing the restaurant I return to marketing and the web. That’s when I decide to take those great recipes and create this recipe site devoted to Latin foods, culture, and travels.
