Butter Buns

It's a specialty from Nagercoil bakeries, and it's incredibly wonderful. It is simple to prepare at home.
Servings 72 rolls

Equipment

  • 2 Full Sheet Pans 

Ingredients
  

  • 3 tbsp Instant Yeast 
  • 3 ½ cup Lukewarm Water 
  • 3 lbs King Author AP Flour
  • 1 ½ tbsp Salt
  • ½ cup 2tbsp Sugar 
  • 1 lbs 3 oz Butter Room Temperature 
  • ¾ cup Cultured Buttermilk Blend
  • 1 ½ cup Instant Mashed Potato Flakes (Ground) 

Instructions
 

PREPARATION Instructions

  • Mix Yeast with 5 Tablespoons of lukewarm water and a pinch of sugar. Let stand for 15 minutes, it will begin to bubble and rise.
  • Combine flour, salt, sugar, buttermilk blend, and ground potato flakes and mix. Add dry ingredients to mixer. Add butter, yeast, and water.
  • Mix with dough hook at medium-low until well combined 5-8 minutes. Place dough in mixing bowl and cover with towel or apron and let rise till double in size.
  • About 1 hour. After first rise, prepare sheet pan with parchment paper and spray pan edges with cooking spray. Take dough and form into balls. (75 Grams).
  • Place on sheet pan 2 inches apart. Place in covered proofing rack and let rise till double in size, about 1 hour.
  • When double in size, spray with egg white and water mixture.
  • Bake in 350° F for 20 minutes or until golden brown on top. Remove from oven and butter tops with butter brush.

BUTTER BUNS COOKING Instructins

  • Wash, Rinse, and Sanitize prep station .
  • Wash hands 
  • Collect all necessary pans, pots, utensils, and equipment 
  • Mix yeast with some of lukewarm water and a pinch of sugar 
  • Let stand for 15 minutes 
  • Combine flour, salt, sugar, buttermilk blend, and ground potato flakes 
  • Add butter, yeast, and water to flour mixture
  • Mix with dough hook until dough is smooth and well combined 
  • Spray large mixing bowl with cooking spray and add dough 
  • Cover and let rise in warm spot, covered cooling rack, or hot storage 
  • Let rise until double in size. About 1 hour. Line sheet pan with parchment
  • Roll into 75g buns .Place 2” apart on pan .Brush with egg wash .
  • Bake at 350 F for 20 minutes until golden brown on top 
  • Store in 15 rolls in hot display case and the rest in 3 pans  
  • Cover with plastic wrap and foil to keep from drying out .
  • Label with name and date. 
  • Store in hot storage .
