Delicious sofrito is typically made from scratch using a medley of sweet peppers and aromatic herbs and spices. This recipe takes those ingredients and melds them into a quicker simmer sauce, sure to make all your meals more flavorful. This sauce is the backbone of many traditional Puerto Rican dishes and is one of the most important recipes in our cookbook .This recipe combines the best elements from our family recipe files and has been part of my family for literally decades.

Many Latin Caribbean foods contain the secret ingredient sofrito, which is simple to create. Tomatoes, peppers, cilantro, onions, and garlic are blended into a flexible, flavorful puree.
Servings 8 qt

Ingredients
  

  • 1 cup Extra virgin olive oil
  • 2 qt Onion, finely chopped
  • 4 qt Bell pepper, finely choppe
  • 1 cup Minced garlic 
  • 20 bay Bay leaf 
  • 1 ¼ cup Sazon 
  • 2 cup Tomato sauce
  • ¼ cup Cumin 
  • ¼ cup Oregano
  • ½ cup Black pepper, plus more to taste
  • cup Salt

Instructions
 

  • Wash, Rinse, and Sanitize prep station. 
  • Wash hands .
  • Collect all necessary pans, pots, utensils, and equipment .
  • Finely chop onions, garlic, and peppers .
  • In large cook pot sauté onion, garlic, peppers in half the oil 5 minutes or until soft .
  • Add Sazon, bay leaves, cumin, oregano, black pepper, salt, and tomato sauce. 
  • Cook 2 minutes more. 
  • Adjust oil level with remaining oil .
  • Check and log temperature  .
  • Place in shallow pan and cool .
  • Cover with lid .
  • Label with name and date .
  • Check and log temperature.  
  • Store in walk-in .
  • Warm oil in a large braising pan over medium heat. Add the onion, bell pepper and garlic cloves and sauté until soft.
  • Add Sazon, bay leaf, cumin, oregano, black pepper and salt, tomato sauce and simmer for 10-20 minutes more.
