Roasted Rojo Salsa
Roasted Rojo Salsa has a slightly smokey spicy flavour, takes 30 minutes to prepare, and is a very versatile condiment!
Ingredients
- 5 lbs. Roma Tomatoes roasted.
- 4 Serrano chilies
- 1 Bunch cilantro
- 1 Onion roasted
- 8 Cloves garlic
- 2 tbsp Cumin
- 1 1/3 tbsp Salt
- 1 1/3 tbsp Sugar
- 4 Limes juiced

- Roast Tomatoes, Onions on wood grill.
- Combine tomatoes, cilantro, onions, garlic, chilies, cumin, salt, sugar, and lime juice. Use blender and mix to consistency .
ROASTED ROJO SALSA COOKING Instructions
- Wash, Rinse, and Sanitize prep station.
- Wash hands
- Put on gloves (RTE Food)
- Collect all necessary pans, pots, utensils, and equipment
- Combine tomatoes, cilantro, onions, garlic, chillies, cumin, salt, sugar, and lime juice in large container.
- Blend with blender stick until salsa thickness. Don’t over blend.
- Cover with lid.
- Label with name and date.
- Check and log temperature.
- Store in walk-in cooler.
