The Classic Roasted Salsa Recipe is the perfect way to add flavor, texture and color to your party, holiday meal or everyday meal.

The traditional recipe for roasted salsa is a combination of tomatoes, onions, garlic and cilantro. The ingredients are cooked in the oven until soft and then pureed to a smooth consistency.

Salsa is usually served cold with chips or as a topping for tacos or nachos. It’s also delicious as an ingredient in other recipes like soups, stews or burritos.

Roasted Rojo Salsa

Roasted Rojo Salsa

Roasted Rojo Salsa has a slightly smokey spicy flavour, takes 30 minutes to prepare, and is a very versatile condiment!
Servings 1 Gallon

Ingredients
  

  • 5 lbs. Roma Tomatoes roasted.
  • 4 Serrano chilies 
  • 1 Bunch cilantro 
  • 1 Onion roasted 
  • 8 Cloves garlic
  • 2 tbsp Cumin 
  • 1 1/3 tbsp Salt
  • 1 1/3 tbsp Sugar
  • 4 Limes juiced

PREPARATION Instructions

  • Roast Tomatoes, Onions on wood grill.
  • Combine tomatoes, cilantro, onions, garlic, chilies, cumin, salt, sugar, and lime juice. Use blender and mix to consistency  .

ROASTED ROJO SALSA COOKING Instructions

  • Wash, Rinse, and Sanitize prep station. 
  • Wash hands 
  • Put on gloves (RTE Food) 
  • Collect all necessary pans, pots, utensils, and equipment 
  • Combine tomatoes, cilantro, onions, garlic, chillies, cumin, salt, sugar, and lime juice in large container. 
  • Blend with blender stick until salsa thickness. Don’t over blend. 
  • Cover with lid. 
  • Label with name and date. 
  • Check and log temperature.  
  • Store in walk-in cooler.
