Roasted corn is a simple and enjoyable recipe that can be prepared at any time of year. It's a great side dish or snack!

- 16 Corn cobs husk’s on
Instructions
- Wash, Rinse, and Sanitize prep station.
- Wash hands.
- Collect all necessary pans, pots, utensils, and equipment.
- Get corn from walk-in using large hotel pan.
- Carry or cart corn to grill.
- Roast corn in coals under grill, before chicken is grilled .
- Cook for 15-20 minutes, rotating occasionally.
- Remove roasted corn from grill coals.
- At RTE prep area .
- Remove root of corn cob squeeze cob out.
- Clean husk and silk off corn .
- Cut kernels off cob .
- Heat corn to 165° F in oven or stove top.
- Label with name and date.
- Check and log temperature.
- Store in 2 qt. metal pan, cover, and place in hot storage at 135° F .
- Soak corn in water for 5 minutes. Place corn cobs directly on wood coals. Cook 30-35 minutes. Turn every 5 minutes.
- Clean husks and silk off. Cut cob into 3 pieces.
