Rojo Salsa

Ingredients
- 5 lbs. Roma Tomatoes
- 4 Serrano chilies
- ½ Bunch cilantro
- 1 Onion chopped
- 8 Cloves garlic
- 2 tbsp Cumin
- 1 1/3 tbsp Salt
- 1 1/3 tbsp Sugar
- 4 Limes juiced

- Combine tomatoes, cilantro, onions, garlic, chilies, cumin, salt, sugar, and lime juice. Use blender and mix to consistency
ROJO SALSA COOKING Intrsuctions
- Wash, Rinse, and Sanitize prep station .
- Wash hands
- Put on gloves (RTE Food)
- Collect all necessary pans, pots, utensils, and equipment
- Combine tomatoes, cilantro, onions, garlic, chillies, cumin, salt, sugar, and lime juice in large container
- Blend with blender stick until salsa thickness. Don’t over blend.
- Cover with lid.
- Label with name and date.
- Check and log temperature.
- Store in walk-in cooler.
