Mojo sauce is a traditional Cuban salsa made with garlic, cumin, salt, and lime juice. It’s served with pork dishes, but you can use it on anything—it’s amazing as a marinade or just as a dip.

Mojo sauce is a traditional sauce originating in Cuba that is used to flavor meat, fish, and poultry. The word mojo comes from the Spanish verb mojar, which means “to wet” or “to moisten.”

Mojo sauce is made by combining fresh citrus juices like orange or lime with garlic, cilantro, oregano, and olive oil. It’s typically served with grilled or roasted meats.

This recipe for Perfect Mojo Sauce calls for all of those ingredients plus a little bit more: salt and pepper for seasoning; honey for sweetness; and vodka for an added kick.

The vodka is optional but highly recommended if you’re looking to add an extra kick to your mojo!

Slow-roasted pork is frequently marinated in this chile-and-garlic-packed Cuban sauce.

Ingredients
  

  • 2 cup Minced garli
  • 1 cup Ground cumin 
  • 1 cup Ground black pepper
  • 4 cup Oregano
  • 1 gal Orange juice
  • 2 qt Lime juice 
  • 2 qt. Olive oi
  • 2 cup Salt

PREPARATION Instructions

  • Mix and combine all ingredients  

MOJO SAUCE COOKING Instructions

  • Wash, Rinse, and Sanitize prep station .
  • Wash hands 
  • Put on gloves (RTE Food) .
  • Collect all necessary pans, pots, utensils, and equipment. 
  • Combine all ingredients.
  • Cover with lid. 
  • Label with name and date. 
  • Check and log temperature.  
  • Store in walk-in cooler.
