- 5 lbs Roma Tomatoes
- 4 Yellow onions
- 6 Serrano peppers
- 1 Bushel cilantro
- 1 ½ cup Lime juice
- 4 tbsp Salt

- Wash, Rinse, and Sanitize prep station .
- Wash hands.
- Collect all necessary pans, pots, utensils, and equipment.
- Put on gloves.
- Collect tomatoes and onions.
- Wash tomatoes.
- Clean onion of outer skin and cut in half set aside.
- Remove stem root from tomato set aside.
- Check and log temperature .
- Dice onions and tomatoes.
- Collect cleaned peppers, and minced cilantro, limes, and salt and pepper.
- Mix until well combined.
- Store in 1 gallon plastic container.
- Cover with lid.
- Label with name and date.
